I was really going for a new Crock It! recipe for this week, but all three of my experiments last week ended up disasters. On one night, we actually ordered pizza, which is something I usually only joke about. In a perpetual state of optimism, I figure this presents a good opportunity for me to put together something inspired by a conversation I was having with a mom in town who loves her slow cooker but needs specific recipes: She’s a vegetarian.
As a diehard carnivore, I never thought to categorize vegetarian dishes, or make them intentionally, but alas there are 15 vegetarian Crock It! recipes and while there are some that are not of vegetarian origin, they can easily be made vegetarian. So, in the event there are other vegetarians out there, and I’m sure there are, I’m going to do two things here.
The first is to recap the vegetarian recipes I’ve done so far. I’m including my favorites below, but there are a couple of others on the site that are side dishes and desserts.
The second is to try to spend the next few weeks focusing on vegetarian recipes, some of which will use spring vegetables. I’m not sure how well this will work, especially with a slow cooker, but I figure it’s worth a try.
